Georgie's continues a tradition: naming restaurants after the women who shaped Chef Hight's life. Opal was his grandmother. Georgie is his niece, Georgia, a good luck charm, and a reminder of what matters beyond the kitchen. The name also connects to Midland in an unexpected way, as Georgia is the name of one of Permian Resources founder James Walter's daughters, adding another layer of meaning to a restaurant built for this community.
